The Bikini Cocktail
Yields 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Put all the ingredients into a pot, bring to a light boil, agitating to dissolve. Then, remove from the heat and leave to cool down entirely. Transfer into an sterilised bottle, seal and refrigerate it in the fridge, it will last for around four weeks.
For the Premix: Mix all the liquids into one sizeable container, allow it to infuse for one hour, then filter it preferably using cheesecloth, so it's completely strained.
When ready to serve: Add 85ml of the batch mix to a cocktail shaker filled with ice, gently stirring lightly for one minute to cool it down. Strain to a frosted cocktail glass or equivalent, decorate with some cranberries and finish using a quick spritz of mandarin oil over the top.
